A Thick Vegetable Soup






Nana collection of recipes

Ingredients :

* 3 tablespoons of olive oil
* 1/4 savoy cabbage
* 1 red onion
* 1 clove of garlic
* 2 marrow squash
* 2 potatoes
* 3 medium tomatoes
* 2 ribs of celery
* 1/2 cup of peas
* 200 grams of chopped spinach
* 4 cups of water
* 200 grams of rice
* 2 cups of chicken broth
* 100 grams of bacon
* salt to taste
* pepper to taste
* chopped parsley
* grated parmesan cheese

Preperation:

In a pot heat the olive oil and fry the bacon cuted into cubes and onion. Vegetables, wash thoroughly and cut them into small pieces. Put all vegetables in a pot with bacon, add salt, pepper, pour water and cook for 15 minutes. After this time, add the chicken stock and rice and continue to cook for another 15 minutes. When serving soup add chopped parsley and parmesan cheese to your liking.
